Chocolate, Coconut, Banana Shake

One day too late, but here it is: the famous Chocolate Shake. It's healthy (really!) and im sure you will love it. You can make it for breakfast, but it's also a great snack or energizer after sport. Lots of people still think that chocolate is unhealthy, but cacao is actually a superfood. It is one of the richest sources of anti-oxidants, it gives you a better focus and it is a natural medicine against depressive feelings. Don't buy a milk chocolate bar, because that one is full of sugar. Try a raw chocolate bar one time and you will be surprised how great the taste is (if you can't find it buy the purest bar there is). I use a lot of raw chocolate powder, which is the food which contains the most anti-oxidants of all. 

SUPER TASTY CHOCOLATE SHAKE :)

Ingredients:

1 frozen banana
1 full tbsp raw chocolate powder
1 cup of almond/soy milk
1/4 cup of thick coconut cream
1 tbsp of honey/maple syrup/agave
1 tbsp of chia seeds (optional)

On top:
Shredded coconut (optional)
Oats for some extra energy (optional) 

Add banana, milk, coconut cream, honey, raw chocolate powder and chia seeds (opt) in blender. 
Blend for about 1 minute. If you like you can put some shredded coconut and/or oats on top.
Have Fun!

Cucumber/Mint Lunch Salad

Good Evening!

How was your day? I did some job applications and worked on my new blog. For lunch I wanted to try something new. Lately I haven't been very hungry for lunch (I think it's because of the huge smoothies I have in the morning) and I was looking for a light, tasty salad. I found a great recipe on one of my favorite food blogs and decided to try it. It's a cucumber salad with mint, coconut cream and lime.

Cucumber facts:

  • Cucumber is from the same family as squash, melon and pumpkins
  • It is very high in water and low in calories
  • It helps in kidney, liver and pancreatic disease
  • It increases the flow of urine (cleansing)
  • Don't keep the cucumber in your fridge. It's better to store it in the basement (cool, dark place)

Cucumber/Mint salad with Coconut/Lime Dressing

Adapted from Oh She Glows

For 1 person:

1 peeled cucumber, chopped
Handful of mint, chopped
Handful of dille, chopped
1/4 red onion, chopped
Juice of half a lime
1 tbsp olive oil
1/8 cup coconut cream
2 tsp of honey
salt 

Put the cucumber, half of the mint, dille and onion in a bowl.

Process the lime juice, olive oil, coconut cream, honey and half of the mint  in a food processor.

Mix together in the bowl and season with salt and pepper.

Goes well with a slice of spelt bread and humus. 

Have a nice lunch!

Spinach and Tomato Pasta

Nowadays running is going so well! Two days ago I had my first 50 minutes run ever…and actually it was not so hard as I thought it would be. My goal for the end of june is to do a 60 minutes run so im curious how its gonna be. A couple of weeks ago my father gave me a heart rate monitor and I really like to use it, but what im missing is that I can't see how many kilometres I ran. It would be great to know in how many minutes I can do 5 km now (my first race time was 29 min).

Yesterday evening I made a 1p dinner. It had to be vegan, tasty and fast and I decided to try Spinach/Tomato Pasta. It was yummy!

Resultaat

For 1 person I used:

65 gr whole wheat pasta 
1 tbsp olive oil 
2 garlic cloves, minced
1 red onion, chopped
2 sundried tomatoes, in pieces
200 gr spinach
1 tomato, chopped
Handful fresh basil
1 tsp tomato paste
1 tbsp ketchup
5 black olives (optional)
Vegan cheese (4 tablespoons nutritional yeast + 8 tablespoons toasted sesame seeds + 1 teaspoon salt. Mixed in food processor)
Pepper and Seasalt

Cook the pasta Al Dente in a medium sized pot.

In another pot heat 1 tablespoon of olive oil. Add the onion and garlic and fry for 2 minutes. Now add the tomato paste, ketchup, tomatoes, vegan cheese, salt and sundried tomatoes and stir. 

Put the spinach in a strainer and poor the pasta (with cooking water) on it (the spinach will shrink). Add this in the pasta sauce and stir well. You can add some more olive oil if you like. 

Garnish with basil, black pepper and olives and enjoy this simple but healthy dinner!

Smoothie Love

Goodmorning!

Did you have a nice weekend? I had. Yesterday I walked through the nature with my mom. We were in Amerongen, it's a very nice village in the middle of Holland. There's a beautiful castel, but unfortunately it was closed. So we walked around for 1,5 hours and enjoyed being in such a quiet environment. After the walk we sat on a terrace to enjoy the sunny weather. Of course there was just meat and fish on the menu so I asked the waiter to bring me a sandwich with eggs and vegetables. It would be great if restaurants in this country include more vegetarian/vegan food on their menu's.

At the end of the day I took the train to Amsterdam and I was soo looking forward to see Ginger again. She was alone for more than 1 day and I felt a bit guilty. Fortunately she wasn't angree with me ;)

This morning I woke up and I saw a grey, rainy sky. It was a good moment for a chocolate, peanut butter, blue berry smoothie. 

Ingredients:

1 cup of soy milk
handfull blue berries
1 frozen banana
full tsp raw choc powder
1 tbsp chia seeds (you can also leave this out)
1 tbsp peanut butter (I made this peanut butter but you can also buy it at the organic store)
Honey to taste

Put everything together in a blender.

Great ‘healthy’ Choc Cookies

Yesterday my friend Chadia came to Amsterdam. 15 minutes before she arrived I realized I had nothing sweet in home so I baked some last minute chocolate cookies with the ingredients I had. I thought they wouldn't be great, but actually they were :) I made about 15 cookies and at they end of the day there were just…0! I'll give you the recipe so you can try them yourself. The cookies are healthy compared to 'normal' cookies you buy in the supermarket. I used sucanat as sweetener and spelt flour instead of wheat.

Ingredients

Inspired by Suzette's Chocolate Cookies

2 cups of spelt flour
3/4 cup raw chocolate powder
1 cup sucanat
1 tsp wine stone baking powder (you can also use normal baking powder)
2 tsp cinnamon
2 tbsp chocolate paste without sugar
1 tbsp chia seeds (organic store) or 1 egg
1/2 cup soy milk
3/4 cup olive oil
1/2 tsp sea salt (mashed)

Preheat the oven on 175 degrees. Mix the soy milk and chia seeds in a glass. Mix the spelt flour, cacoa powder, salt, cinnamon and baking powder in a large bowl. Pour the sucanat, olive oil and chocolate paste in a smaller bowl and stir. Then mix it with the soya milk. Mix the wet ingredients through the dry ingredients and stir well. Make small balls of the dough and put them on a baking sheet. Put in the oven for 12 minutes and bon appetit!
